Overview

Step into the rich world of Ottoman royal gastronomy with this immersive cooking class led by Masterchef Kadir Yılmaz at Matbah Restaurant. You'll learn the preparation of historical recipes dating back to the 15th–17th centuries, each inspired by authentic palace records. Guided by expert hands, you’ll prepare dishes such as Almond Soup (1539), Quail in Garden Eggplant (17th c.), and Special Halvah (1582). With each dish, you’ll discover the culinary techniques, symbolism, and balance of flavors that made Ottoman cuisine legendary. As part of our Workshops collection, this experience offers a rare blend of hands-on cooking and historical immersion in the heart of Sultanahmet.


Sample Menu:

• Almond Soup (1539): Light almond broth with grated coconut and cinnamon syrup

• Sailor’s Roll with Honey (15th c.): Pastry filled with seven Turkish cheeses, fried in olive oil and served with currants and honey

• Quail in Garden Eggplant (17th c.): Quail meat with pepper paste and basil sauce in roasted eggplant

• Special Halvah (1582): Traditional dessert with starch, rose water, almond, sugar, and butter
